Cauldron Of Bubbling Cheesy Bean Soup
Halloween is 5 days away, and this cheesy bean soup is easy to make and will satisfy everyone before heading out for a night of trick or treating or a Halloween party! I love making this on Halloween or anytime throughout fall and winter! Here’s how to make it:
Ingredients:
- 1 lb. Ground Beef (substitution: ground turkey or ground chicken)
- 1 Can Cheese Soup
- 1 ½ Soup Cans of Water
- 1 16-ounce Package Mild Shredded Cheddar Cheese (or shredded cheese of your choice)
- 2 15-ounce Cans Black Beans (rinsed & well drained)
- 1 15-ounce Can Kidney Beans (rinsed & well drained)
- 1 Cup Salsa (heat preference of your choice)
- 1 Loaf of Pumpernickel Bread (or your choice of bread)
Directions:
- Sauté ground beef in a soup pot over medium high heat until browned, about 5 to 7 minutes.
- Add canned cheese soup and water and bring to a very gentle simmer.
- Add the cheddar cheese and stir until melted.
- Stir in beans and salsa and bring back to a simmer.
- Cut off top of the loaf of bread, and reserve for later.
- Carefully hollow out the center leaving 1 1/2-inch shell.
- Spoon soup into hollowed out bread, allowing some to spill over top of bread cauldron as if bubbling, and replace top of the loaf.
- Serve hot.
